Sunday Sup: Cashew Chicken

The hubs asked for cashew chicken so I went hunting for a recipe to try. I found this one at Recipe Critic. I stuck close to the recipe but it’s me, I gotta play with something.

Cube 3 chicken breasts, toss into a gallon freezer bag, pour in 1/4 c gf flour blend, seal the bag, then toss like mad.

Heat olive oil over medium in a large skillet. Add chicken, brown lightly, stirring often.

While the chicken cooks get out your crock pot.

The make the sauce: 1/2 c gf tamari, 4 tbsp rice vinegar, 4 tbsp ketchup, 3 tbsp sweet chili sauce, 1/4 c coconut sugar, 1 tsp minced garlic, 1 tsp powdered ginger, a hefty shake of chili flakes.

Once the chicken is browned put it in the crock pot and pour on the sauce. Cook on low for 3 hours.

Add one diced red bell pepper, 12 oz broccoli florets, and 1 1/2 cup cashews. Stir to combine. Cook one hour more on Low.

Make whatever rice style product you like. Real rice. Cauli rice. Spiraled Zucchini noodles. There’s plenty of sauce to give whatever you put the crock pot dish on a good flavor.

No picture I’m afraid, the hubs scarfed this like there was no tomorrow.

Fiendish Friday: Halloween Funny

My kiddo has a lot of weird appointments this year so we find ourselves needing to kill 30 minutes here, 30 minutes there. We can’t always go to Half Price Books. Ok we could but that gets dangerous….

We found ourselves with 45 minutes to kill by a party store. The kiddo wanted to look at costumes and I needed to pick up some more toys for the fidget box I bring to my classes. We stop in the aisle with the Star Wars costumes on one side and a bit further down, wigs. Party wigs. Wild crazy multi colored wigs.

I’m looking them over.

This woman walks up and is looking as well. We share the brief smile you give people who are standing near you looking at similar things in a store. Come on, we all have one.

Anyway, I see her take a double look. Then she’s looking from my hair to the wigs to my hair to the wigs. Finally I smile and say,

“I need something boring for Halloween.”

I seriously thought she was going to fall over laughing so hard.

Wednesday Words 10.25

Greetings and Salutations my friends. I’m posting a bit later than normal but I find myself constantly running behind these days. On the other hand I am getting a lot done in regards to my books. Oh well. Late is the new Early, right?

Last weekend I schlepped up to Canada for the Surrey International Writers Conference. I will right a long post detailing the conference soon but for tonight I will hit the three coolest things and the three “you have got to be kidding me” things.

  1. I met seriously amusing people. Just flat out amazing, holy cow people.
  2. I learned some new bits about publishing, self publishing, and marketing that I did not know before.
  3. And yeah a couple of agents and an editor want the first 40 of my murder mystery.

Now the cruddy parts…

  1. Due to three traffic accidents and some weather straight out of Sharknado, I got to the hotel too late to eat lunch before my 3.5 hour long Masters Session. Now this might not seem like a big deal unless you know I don’t eat brekkie usually, I drink coffee. So I pull an epic bar out of my bag and power through. I can get dinner before the evening session. Tell me you know where this is going? The afternoon session runs so long I don’t have time to eat dinner. So I pull another epic bar out of my bag and settle in for 3.5 hours. An hour in I hated the presenter so much I got up and walked out. Room Service? HGTV? Yes, please.
  2. I went to a panel that described as X. And then the presenter did not talk about X, he told “aren’t I great” stories. And during Q&A when I and several other people tried to ask pointed questions about X, he dithered and talked around an answer. Thanks ass, I missed a good workshop on editing for this.
  3. The temperature. Seriously. I have been to conferences before I knew what to prepare for, but this was like – welcome to the Sahara during the dry season and  now Antarctica in winter.  I have never seen such epic temperature discrepancies, easily 20 degrees between rooms. All dry too. The kind of dry where your nose starts spontaneously bleeding, that dry.

All in all however I will call it a successful weekend. Look for more on the conference in the coming weeks. Also keep an eye out for Ostrich Mentality pre-sale, next week.

Book Review and Interview: The Seventh Seed

Every so often an author blesses me with an early copy of their latest book and then agrees to a short interview to amuse my readers. Tomorrow marks the launch of Allison Maruska‘s latest novel, The Seventh Seed.

Seed is the standalone sequel to The Fourth Descendant, and despite not having read it, I was not at all lost or confused. Nor was I drowning in back story. In fact, I was rather intrigued to read the previous book and learn more about the characters who have clearly been up to some interesting things.

Seed is a well done conspiracy book. The historian in me has no problem believing it’s coming. After all similar things have happened more than once before. I don’t want to give away too much. Let’s just say many people in Seed have taken to heart Margaret Mead’s famous quote, “Never doubt that a small group of thoughtful, committed citizens can change the world; indeed, it’s the only thing that ever has.” It makes for compelling reading. I quickly became invested in the welfare of the characters.

So Allison, I have to say the future you paint in The Seventh Seed, is pretty scary. Being lied to with no choice but to pretend to go along or pay the price. That might top my list.  What story scares you?

 Of all stories? The Shining does the best job. The topiaries moving around was SUPER creepy.

Oh god. When I was in high school my boyfriend talked me into watching that with a bunch of our friends, now I never ever dabbled in horror before that movie, ever. That was my introduction. I think I almost peed my pants, twice. Ok, that was an over-share , clears throat, moving on.

Which word / phrase do you find yourself always over-using and having to edit out?

It’s a moving target. “For a moment” had a good run, but after I killed it there was too much throat clearing. Now there’s too much going on with eyes.

Clears throat. Sometimes you legitimately need to clear your throat a lot, like when you’ve just told your entire reading public you almost peed your pants watching The Shinning. LOL. Oh man, enough about me, let’s talk about you. If you could be any one of your favourite characters (your own or others you’ve read) for one day, who and why?

So I read a book a while back called His Majesty’s Dragon. It takes place during the Napoleonic Wars, only all of the armies have air forces comprised of dragons. The MC is Lawrence, and he unwittingly becomes the handler of a Chinese dragon that speaks eloquently and likes to be read to. I want to be Lawrence because he has a pet dragon, basically. Preferably on a day when they aren’t in battle.

 
Wow. Sounds like a very cool book. I’ll be sure to check that out, after I read the rest of yours of course. LOL. We’re about out of time here. Which means – cocktails! If you had a cocktail named after you, what would it be called and what would be in it? Would you drink it?

The Anxious Grammarian. LOL And probably not. I bet it tastes like advil and tears.

Um, no. I find it impossible to believe a woman who wants a dragon as a pet would have a boring cocktail. Let’s call it the Elegant Dragon. And I bet it tastes of Cinnamon tea and vodka. Bottoms up!

Sunday Sup: Waffles – Not Just for Brekkie

I’m not sure what happened to me but I woke up one morning with this mad craving for waffles and chicken. I’ve never eaten “Chicken and Waffles” in my life but I wanted them. Given that I am gluten free I wasn’t going to be going to a restaurant for this meal anytime soon. So I started googling for recipes and came up with a fun list to try. Then I invited some unsuspecting friends over and cooked for them while we played Ticket to Ride. Bwahahahah.

Buy a tasty gluten free bagged waffle mix. I LOVE Pamela’s if you can find it. Bob’s Red mill is also yummy. Arrowhead Mills is passable, do NOT add the honey for this recipe. Mix the batter according to directions more or less. I like butter instead of oil. Water instead of milk for these waffles.

Before you pour into your waffle iron try some additions.

Chicken – plain canned chicken. One fat 10 oz can for a single waffle batch. Break it up a little as you stir it in.

Chopped bacon and cheddar cheese. A nice big handful of each.

Chicken, Bacon, and goat cheese. A smallish handful of each, more or less. Goat cheese sticks together if you try to “handful” it, so eye ball it.

Sauces: Hone Mustard was by far the most popular. I’ve given the recipe before: mayo, Dijon mustard, honey, lemon juice.

Sweet Chili and mayo was also tasty.

The ranch never even got opened. LOL

No pics, the plates were decimated along with a batch of Bacon Cheese Sticks and a lot of alcohol.

Fiendish Friday: The Library

I love our library system. 50 plus branches and your one card will let you check out at any of them. You can return books to any of them. You can download ebooks and audiobooks from anywhere in the world. (Disclaimer, I have only verified this from multiple US locations, Germany, and Holland – but close enough right?)

But like all things, it has a flaw. You can order books from one library to another one. They email you when it arrives and you have one week to pick it up. So, let’s pretend you get a notice that says A Wrinkle in Time is waiting for you at X branch. Your hold expires on October 11th. How long do you have to pick it up?

A) Til closing time on October 11th?

B) Til closing on October 10th?

C) Til a random undisclosed time on October 10th? (earlier than 2PM)

If you guessed A or B, you would be wrong. For the fourth time, I went to pick up a hold the day before it expired only to discover it was already gone. Grrrrr. And no, I didn’t say anything this time because the last three times it happened, the library told me I was crazy, in short. Basically, no that didn’t happen. No, we didn’t. No, you’re wrong. Sure, I’ll buy that the first time. LOL. And it’s always the same branch. When I have books delivered to other branches, I have no problems at all.

Something is wrong at that branch. Something horrifying. I am being denied books. Oh, the horror.

Wednesday Words 10.18

Hello nerves. I am currently in the middle of packing for the Surrey International Writers Convention, which I leave for tomorrow morning. It is my first BIG convention. It is also my first writing only convention. It is my first sit down with an agent.

If I could just ignore the colony of butterflies trying to escape my stomach, I could convince myself that I’m not scared witless. But alas….

On to happier notes, The Box Under The Bed, is kicking ass and taking names. We are beating Stephen King in the horror section. Yes, folks, beating the master. Woo-flippin’-hoo.

And things are almost ready for Ostrich Mentality. Editing is done, until my ARCs tell me otherwise. It’s been formatted. I have a marketing plan this time. I am essentially waiting on some quotes for my back cover about how mediocre, I mean awesome it is from best selling authors who are kindly helping me out.

How about a little cover preview? Yeah?

Book Review: All Quiet on the Western Front

Anybody else have to read this in high school? God, I hated All Quiet on the Western Front by Erich Maria Remarque. Yawn, yawn, so boring. Why do they torture us with this tripe?

Oh, the different 25 years makes.

I just reread All Quiet as I am teaching 20th Century World History this year at the coop and I am assigning it to my kids. It’s always good to pre-watch, pre-read, pre-whatever material before you show it to teenagers. LOL. Especially when you have complete control over what you expose them to. I try not to abuse that privilege.

Anyway, I loved this book this time. Seriously, the interactions between the humans. The book says it’s a war story but really, it’s the story of men and the brotherhood they form when under extreme pressure. The beauty of their relationships in a world that is stripped to the bare bones of life and death. You have only each other. I’m going to cry again just talking about the darn book. LOL

℘℘℘℘℘- Five pages. Incredible classic. If you remember it as a horrible book you were forced to read, give it another chance. It is an epic journey of men.

Sunday Sup: Salmon and Shrimp

This is practically straight from Creme de la Crumb but it was soooo good I had to post it.

Melt 3 tbsp butter and 3 tbsb honey in a skillet over medium heat. Whisk to combine smoothly. Add your salmon fillets, I used 4 in the 6-8 oz range. Mine still had the skin on, was just fine. Sear for 5 minutes. Keep an eye out because mine got a little over brown after 5 minutes. Flip and cook for 5-6 minutes.

While your salmon is cooking prepare your shrimp, 1 lb worth, in a medium size if you got it. Defrost, detail, de-vein – whatever those little buggers need and pat them dry.

Mix up some spices. 1 tsp garlic powder, 1 tsp paprika, 1/2 tsp onion powder, and a dash of cayenne pepper. Stir stir stir.

When the salmon is done, brown and flaky and cooked through, add 6 tbsp of butter to the pan. When it melts add in the spice mix. Stir until combined. Add the shrimp to the pan, stir fairly frequently until opaque.

Serve the salmon covered in shrimp and drizzled in the spiced butter left in the pan.

Fiendish Friday: Nasty Surprise

The kiddo is doing a lot of new things this year. This week was his first survival skills class. I call it that because it’s complicated to explain and the actual title tells you jack. It’s a once a week, 4 hour long class, where the instructor covers teaches things most people don’t do anymore. Make a fire from nothing and keep it going in the rain. Go from tracks on the ground and follow them to the deer.  Built shelter with what’s around you. Find your way in the forest without gps. LOL

Anyway, I am on my way to pick him up from the first day and I’m a little worried about being late. It’s not like this is some school, where he can read a book if mommy is late. This is a trail head I’m collecting him at. So for once, I follow my GPS, which takes me past the high school.

Side Note: I NEVER go past the high school if I can avoid it because it has a 20 speed limit and I got two speeding tickets there the first 6 months we lived here. The problem is there is a stop light at the bottom of a hill and I always get stuck at the light and then accelerate to go up the hill and flash, 23 in a 20, 150 bucks.

But my GPS is insisting that the high school route is ten minutes faster than my usual route. So I go. And a cop steps into the street and makes me stop. Another cop is doing the same on the other side. Interesting. Oh they’re waving those five waiting school buses out into the street. Ok. No big deal. Why the buses can’t go out the stop light side if they need a protected left I don’t know but ok. Only after the five waiting buses go, they don’t let traffic go on the street. Oh, no. They hold us there until all 21 buses get loaded and leave the parking lot.

Anyone want to guess how long it takes for 21 buses to load up and pull out of a parking lot that they have to wind through because they’re all pointing the right direction to go out at the traffic light but aren’t using it?
